Sun Dried Tomato Rub

1/2 cup finely chopped, sun dried tomatoes

1/4 cup finely chopped, fresh basil

1/3 cup minced onion

1 tablespoon minced garlic

1 tablespoon dried oregano

1 teaspoon coarse, black pepper

1/3 cup Parmesan cheese

1/2 teaspoon salt

1/4 cup olive oil

3 tablespoon tomato paste

Beef Tenderloin

3-4 pound beef tenderloin, trimmed

Butchers string

Plastic wrap



Horseradish Sauce

1 cup sour cream

1/4 cup mayonnaise

2 teaspoons Dijon mustard

2 tablespoons prepared horseradish

1/2 teaspoon onion powder

Salt and pepper to taste

Whisk all ingredients together.


Sun Dried Tomato Rub

(Marinate beef with rub overnight)

Mix all ingredients together to make a paste.

Tie the tenderloin with butchers string and season with salt and pep-

per. Coat with sun dried tomato rub, wrap in plastic and refrigerate

over night.

Preheat oven to 375F. Place tenderloin on roasting rack and

roast until the center of thickest part of tenderloin reaches 135 degrees. Remove from oven and place a sheet of aluminum loosely over the top. Let rest for 15 minutes before slicing. Serve with horseradish sauce.
