Crostini's

roma crostini balsamic

Ingredients

6 halved plum tomatoes-remove cores, 

olive oil

coarse sea salt

Tomato juice- remove pulp

1 cup balsamic

3 tbsps simple syrup

1 Star anise

Reduce to syrup

3/4 cup whole milk ? ricotta

½ cup mascarpone

Mix ¼ tsp to 1/3 garlic-taste

1.5 oz parmesan

1 1/4 tsps parsley

3 tbps salted butter

1 clove garlic minced

12 slices baquette ¼ to 1/3 inch thick

toast 425F 7-8 min

 

Topping ¼ cup toasted pine nuts-mortar pestle

1.5 tsps basil

1 tsp fine flat wavey thyme

Small pinch salt

 

2 tbsps salted butter melted-1 large garlic minced-stir-press through small sieve-brush on tops
