1.5 cups Jasmine rice

1 teaspoon salt

Shrimp Marinade

16 large shrimp, peeled, deveined, tails on

2 shallots quartered

1 jar Peppadew peppers in brine

8 large garlic cloves

Handful of cilantro with stems

Peanut oil (or another high smoke point oil)

Fresh cilantro 

2 cups good quality coconut milk

1 fresh, ripened pineapple

Palm sugar

Vegetable bouillon paste (Better Than Bouillon)
