Raspberry
Citrus Cooler
Ingredients
3 cups fresh raspberries
2 cups water
1 cup sugar
1/2 cup honey
3 cups sparkling water
Sieve
1 lime cut into rounds
1 lemon cut into rounds
Fresh raspberries for garnish
Fresh mint, muddled
Directions
Place raspberries and water in a medium sized sauce pan and simmer for 5 minutes to release juices. Mash then strain through a sieve and re-heat back in sauce pan over medium temperature. Add sugar & honey and stir until dissolved. Remove from heat and let cool.
Add cooled liquid to a pitcher, add the sparkling water and top off with ice. Squeeze lemon and lime rounds on top, drop into pitcher and stir. Add fresh raspberries and mint and serve with glasses filled with ice.
For a spike, add your favorite sparking wine instead of sparkling water and in addition, your favorite clear liquor.
