Raspberry 

Citrus Cooler

Fresh raspberries with sugar & honey, sparking water, citrus & mint

Ingredients

3 cups fresh raspberries

2 cups water

1 cup sugar

1/2 cup honey

3 cups sparkling water

Sieve

1 lime cut into rounds

1 lemon cut into rounds

Fresh raspberries for garnish

Fresh mint, muddled

Directions

Place raspberries and water in a medium sized sauce pan, bring to a simmer and cook for 5 minutes to release juices. Mash, then strain through a sieve and add back to the pan, over medium heat. Once hot but not simmering, add the sugar and honey and stir until dissolved. Remove from heat and let cool completely. 

Add cooled liquid to a pitcher, add the sparkling water and top off with ice. Squeeze lemon and lime rounds over top then drop into pitcher and stir. Add fresh raspberries and mint and serve with glasses filled with ice.

 

For a spike, add your favorite sparking wine/champagne instead of sparkling water.
