Pineapple, Chili

Crispy shrimp tossed with a pineapple, brown sugar, Calabrian chili sauce & finished with fresh basil & Sesame seeds

Ingredients

Pineapple Chili Sauce 

Note: Maekrua oyster sauce has about half the sodium as the other brands. If using a higher sodium brand you may want to reduce the the oyster sauce or the soy sauce in the recipe.

3/4 cup freshly grated, pineapple plus more for dicing/topping

1/3 cup light brown sugar

1 teaspoon freshly grated, ginger

1/2 teaspoon freshly minced, garlic

4 teaspoons oyster sauce (Maekrua)

2 tablespoons Japanese, soy sauce

¼ teaspoon sesame oil

1 ½ teaspoons rice vinegar

1/2 teaspoon chopped, Calabrian chilis in oil

Fresh basil 

Sesame seeds

Fried Noodles

Mei Fun noodles

Vegetable oil

Sautéed Shrimp

Note: If not using fresh shrimp, soak the shrimp in heavily salted, cold water and rinse 2-3 times. Shrimp should be slightly damp when tossing with corn starch. 
 

1 pound jumbo shrimp, peeled & deveined, tails on

Corn starch

Peanut or vegetable oil

Large, non-stick skillet/pan

Baking sheet with wired rack

Directions

Pineapple Chili Sauce 

Add the pineapple with juices, and brown sugar to a sauce pan and simmer until juices have evaporated/thickened. Remove from heat and whisk in remaining ingredients. Set aside. 

Fried Noodles

Add noodles to hot oil (350F-375F) and fry. Noodles will rise to top, then remove and place on a plate lined with paper towels. Place fried noodles onto serving dish and arrange shrimp over top. Drizzle with more Calabrian chilis, sprinkle with some freshly diced, pineapple, fresh basil and sprinkle with sesame seeds. Serve. 

Sautéed Shrimp

Note: Cook shrimp in batches and add oil as needed. 

Place the shrimp in a bowl and toss with the 3-4 tablespoons cornstarch to coat. Heat 3-4 tablespoons of oil in the skillet over medium temperature. Once hot, add some of the shrimp, spread out evenly and cook about 2 minutes. Turn shrimp over and cook about another minute until opaque. If needed stand the shrimp up in pan and cook bottoms. Remove from pan and place on baking sheet with wired rack. Add more oil and repeat until all shrimp are cooked. Add the shrimp to a large bowl and toss with sauce.
