Peached Tea
w/ Cardamom
"Steeped black tea infused with a fresh peach simple syrup & spicy cardamom and served with fresh mint and lemon"

Ingredients
2 family size black tea, bags (I used Luzianne)
6 large peaches plus extra for garnish
1 cup sugar
Ground cardamom
Fresh mint
Lemons
Directions
Add one quart of water to a pot and heat until steaming hot but not simmering. Add the 2 tea bags and steep for 3-4 minutes. Remove tea bags and discard. Don't squeeze tea bags into the pot or your tea will become bitter. Set aside and prepare peach simple syrup.
Peach Simple Syrup
Wash the peaches, slice in half and remove the pits. Chop the peaches and add to a large sauce pan along with the sugar. Bring to a boil, reduce heat and simmer for 10 minutes. Mash the peaches well and simmer 5 more minutes. Place a sieve over a bowl and press the peach mixture through the sieve using a spatula. Rinse the sieve and pour through the sieve one more time to remove the pulp. Add the peach simple syrup to the cooled tea and taste. If

you want more peach flavor, add 1 to 1 1/2 teaspoons of the peach extract. Add a pinch of the cardamom and taste, then add more if desired. Muddle fresh mint into the peach tea or serve along with lemon slices.
Pour cooled tea into a pitcher along with some lemon and peach slices and serve with tall glasses filled with ice. If time allows, chill the tea in the refrigerator before serving.
