Orange Honey

Roasted Beets

"Roasted beets with oranges, drizzled with a honey goat cheese, sprinkled with walnuts, fresh thyme and lemon zest, finished with honey and cardamom"

Ingredients

2 pounds beets

Olive oil

Salt

Large baking sheet

Parchment paper

Honey Goat Cheese

5 ounces goat cheese, room temp

1 tablespoon honey

¼ cup water

2 Navel oranges

Walnuts, chopped 

Fresh thyme

1 lemon

Honey 

Ground cardamom

 

Directions

Preheat oven to 400F.

Trim the beets, peel and cut into around 1/2 inch rounds. Arrange the beets on the baking sheet lined with parchment paper and lightly brush with olive oil. Season with salt, then turn over sliced beets and repeat. Place in the center of oven and roast for 20 minutes. Turn the beets over and roast another 15 -20 minutes or until a fork goes through them easily. 

Using a sharp knife, remove the peels from the oranges and cut into wedges. 

Honey Goat Cheese

Add the goat cheese, honey and water to a small blender (bullet) and blend together until smooth. If you don't have a small blender, whisk ingredients together and then press through a sieve. 

Note: I used a squeeze bottle to drizzle on the honey goat cheese. 

Arrange the roasted beets and orange wedges onto a serving dish. Drizzle with the honey goat cheese, sprinkle with walnuts, fresh thyme and then zest some of the lemon over top. Finish with a drizzle of honey and a light sprinkling of cardamom. Serves 4-6.
