Mexican Po Boy

Ingredients

2 dozen large shrimp, uncooked, peeled & deveined 

 

 

 

slaw

2 cups green cabbage sliced thin

¾ cup julienned onion

 

1 cup seeded julienned tomato

1.5 tsps fresh chopped basil

2 Tbsps. fresh chopped jalapeno-seeded

lightly salt n pepper

½ tsp lime zest

1.5 tbsp  lime juice

2 tbsps honey

½ tsp sugar

 

½ cup mayo

½ cup sour cream

             1/2 tsp fresh minced garlic

2 tbsps chopped sweet onion

1.5 tsp vinegar

1 tsp Mexican oregano

¼ tsp coarse pepper

½ tsp sugar

salt to taste

 

Mix cabbage and onion together in a large mixing bowl. 

 

 

 

 

                  mix in 1 tbsps fresh chopped cilantro

 

½ cup flour-dredge –shake off excess place on dry surface

1.5 cups panko

1 tsp onion powder

½ tsp garlic powder

1/5 tsps coarse pepper

½ tsp salt

2 tsps chili powder

 

2 eggs

2 tbsps milk

3 tbsps adobo sauce

 

pat dry shrimp n lightly salt
