Mac & Cheese

Ingredients

1 pound Trottole pasta or large elbow noodles

½ cup salted butter

 ½ cup all purpose flour

12 ounces cream cheese

4 cups milk

3 1/2 cups grated American cheese

3 1/2 cups grated Havarti

Salt & pepper

 

14 ounces Kielbasa, chopped and browned in a skillet.  Bacon can be a substitute if desired.  

Directions

Boil pasta in a pot of salted water until al dente and then drain.  

Melt the butter in a large sauce pan over medium heat, whisk in the flour and cook for 1 minute.  Gradually whisk in the cream cheese and milk, alternating with each addition, until smooth.  Bring to a boil, remove from the heat and stir in 2 cups of the American cheese and 2 cups of the Havarti cheese.  Salt & pepper to taste.  

Add the cheese sauce to the pasta and mix gently.  Pour into a buttered baking dish and top with the remaining cheeses.  

Bake in the center of oven at 375 degrees until edges are lightly browned and bubbly.  About 25-30 minutes.  Don't let the top get browned or pasta will become dry.  Tent very loosely with aluminum if needed but don't let aluminum touch cheese or it will stick.  Remove from the oven and top with the browned Kielbasa.
