Elderflower, Pear

Green Tea Fizz


4 cups strong brewed, good quality green tea

1/2 cup honey

2 cups pear nectar

1/2 cup St. Germain liqueur 

1 cup Limón Rum

Brut champagne


Fresh mint




Brew the tea and while still hot, stir in the honey, then let cool. 

Pour into a pitcher, add the pear nectar, St.Germain liqueur, Limón rum, stir and taste.  If needed add more pear nectar, as different brands will vary in sweetness and flavor.  Simple syrup can be added too.  


Add muddled mint, gently squeeze in some sliced lemon rounds and drop into the pitcher.  Pour into glasses filled with ice and a mint leaf, splash with champagne and garnish with a half mooned lemon slice.
