Blackberry

"Fresh blackberries, cinnamon, lime and vanilla topped off with sparkling water"

Ingredients

24 ounces fresh blackberries plus more for garnish

3/4 cup plus 1 tablespoon sugar

Small pinch of salt

1 cinnamon stick

¼ cup water

1 lime 

1/8 teaspoon vanilla extract

Seltzer water (Polar)

8 ounce glasses

Ice

Directions

Note: For a clear syrup press gently on the the blackberries and don't scrape the bottom of sieve. For a stronger blackberry flavor but less clarity, press firmly and scrape the bottom of sieve. 

Add blackberries to a food processor and pulse until finely chopped. Add to a sauce pan with the sugar, salt, cinnamon stick, water and bring to a simmer. Remove the cinnamon stick after 3-4 minutes or until liquid has a subtle cinnamon flavor. Simmer liquid for a total of 5 minutes, then remove from heat. Add the vanilla and zest the lime into the pan. Stir well, then press/stir though a sieve using a rubber spatula. Fill an 8 ounce glass with ice, add 2 tablespoons of cooled blackberry syrup, top with seltzer water and garnish with blackberries and a lime wedge. Makes 12, 8 ounce servings. Store in an airtight container in refrigerator for up to two weeks.
