Peanut Butter Cookies
6 tablespoons unsalted butter, room temp
1 cup extra crunchy peanut butter
1 cup white sugar
3/4 cup light brown sugar
2 large eggs
1 1/2 teaspoons pure vanilla extract
9 ounces all purpose flour (dry weight-food scale)
1 1/4 teaspoons baking powder
Beat the butter, peanut butter, sugars, eggs and vanilla until smooth.
Whisk the flour and baking powder together and then fold into the wet mixture.
Preheat oven to 375.
Roll the batter into balls and place on a cookie sheet lined with parchment paper. Press a fork into cookies in a criss-cross pattern to flatten. (Cookies must be flattened)
Bake in center of oven 8 minutes, remove and let cool on cookie sheet.
Optional: Split batter and add milk chocolate chips to half and fold in.
Makes 2 dozen
