Jello Filled Strawberries with Lime Cream
12 large strawberries washed
Small melon scoop
White ceramic plate
3 ounce box blueberry Jello
Blueberries
1/2 cup heavy cream
2 tablespoons powdered sugar
1 teaspoon fresh lime juice
1/4 teaspoon fresh lime zest
Fresh mint chopped
Chopped Macadamia nuts
White chocolate chips
Make blueberry Jello according to box instructions but don't refrigerate. Cut a thin slice off of the bottom of each strawberry so they will stand up. Do not cut too much off or jello will drain through. Cut off the top of strawberries and scoop out the insides, again being careful not to dig too deep or you will make a hole in the bottom. Reserve the insides of strawberries if you want to make a sauce for drizzling (optional). Place strawberries on a plate and place 2 blueberries in each one. Fill each strawberry with Jello and arrange on plate. Pour remaining jello onto plate to surround strawberries. Place in refrigerator and chill until Jello is firm. Pour heavy cream into a medium sized bowl and add powdered sugar. Beat heavy cream at a high speed until peaks form. Add lime juice and lime zest and mix well. Dollop each strawberry with lime whipped cream, sprinkle with Macadamia nuts, white chocolate chips and mint.
If you want to make a strawberry sauce out of the leftover strawberry centers, pour a little sugar over them and mash. Let rest for 30 minutes. Drizzle over the entire plate for extra flavor and color.
