Italian Meatball Sliders
Roasted Tomatoes
4 plum tomatoes cut in half lengthwise with seeds removed (not cores)
1 tablespoons olive oil
1 tablespoon white balsamic vinegar
1/2 teaspoon salt
1/2 teaspoon sugar
1/8 teaspoon black pepper
3/4 teaspoon minced garlic
Place tomatoes on a baking sheet sliced sides up and drizzle olive oil and balsamic vinegar. Sprinkle on salt, sugar, black pepper and garlic and roast in the oven at 275 degrees for 2 hours.
Meatball Burgers
1 1/2 pounds ground chuck
1 teaspoon salt
1 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon black pepper
1 teaspoon chopped fresh parsley
1/3 cup Parmesan cheese
Mozzarella Cheese
Fresh basil chopped or whole leaf
Slider Buns
Place ground chuck in a large bowl and sprinkle salt, garlic powder, onion powder, black pepper, parsley and Parmesan cheese over the top. Mix well with hands and roll into 2 inch meat balls. Flatten meat balls with hands and cook in a skillet over medium low heat for 2-3 minutes on each side. Cut mozzarella into 1/2 inch slices, place on top of cooked hot burgers, remove from heat and cover so cheese will melt. Place burgers on slider buns, top with roasted tomatoes and basil. Brush garlic mayonnaise (recipe below) on top bun and serve hot.
Garlic Mayonnaise
1 cup mayonnaise
1 teaspoon garlic powder
1/2 teaspoon onion powder
Mix all ingredients together.
