1 pound thinly sliced turkey
8 slices lightly toasted Ezekiel bread
8 slices Muenster cheese
2 peaches thinly sliced
4 cups chopped green cabbage
1 cup mayonnaise
2 teaspoons apple cider vinegar
1/2 cup pineapple juice
1 teaspoon sugar
1 teaspoon fresh ginger zest
1/4 teaspoon cinnamon
3/4 teaspoon finely chopped basil
1/2 cup toasted pecans (in oven at 350 degrees 10-15 minutes)
In a large mixing bowl gently hand toss sliced peaches and cabbage. Set aside.
In a medium mixing bowl add mayonnaise, apple cider vinegar, pineapple juice, sugar, ginger zest, cinnamon and basil. Mix well. Fold in toasted pecans. Pour dressing mixture over top of sliced peaches and cabbage and hand mix well.
Place 4 slices of toasted bread on a cookie sheet. Layer sliced turkey on each slice and top each with 2 slices of Muenster cheese. Broil in oven until cheese is melted. Remove from oven and top with peach slaw and second slice of toasted bread. Serve.
